I have lived in Spain for many years and I have never been to a bullfight.
I just don't like seeing animals suffer.

I personally can't see the attraction.

I was once invited to a farm near Sevilla where the bulls are bred and brought up.
They live in excellent conditions and if it wasn't for the last hour of their lives they would have very little to complain about.
From a morals point of view it would be much worse to eat broiler house eggs than to attend a bullfight.

You can spend many hours debating the rights and wrongs of bullfighting.

Anyway, I will try and answer your question:

Bull fights are not like football matches which are on every weekend.
Most cities only have bullfights at holiday periods and fiestas.

The bullfights in Granada are held at Feria del Corpus which is at the time of Corpus Christi
The dates of the Corpus Christi for the next few years are the following.

In 2022 Easter Sunday will be 17th April
In 2023 Easter Sunday will be 9th April
In 2024 Easter Sunday will be 31st March
In 2025 Easter Sunday will be 20th April
In 2026 Easter Sunday will be 5th April
In 2027 Easter Sunday will be 28th March
In 2028 Easter Sunday will be 16th April
In 2029 Easter Sunday will be 1st April
In 2030 Easter Sunday will be 21st April
In 2031 Easter Sunday will be 13th April
In 2032 Easter Sunday will be 28th March
In 2033 Easter Sunday will be 17th April

There is also often a bullfight in Granada on the last Sunday of September for the
Feria de la Virgen de las Angustias

I don't know the best way to buy tickets in advance.

These web sites have ticket information.

Click here if the above one stops working

To see more info about Bullfighting click on this link.

As you can see if you click on the links there are many more bullfights in Sevilla and Madrid than Granada. So if you really want to see a bullfight it may be better to go another city.
You could commute in one day if there is a bullfight in either Jaen or Cordoba.

The bullring or "Plaza de Toros" is nor right in the centre of Granada and it would be best to get a taxi.
It would cost about 10 euros form Plaza Nueva (2021)
