I can walk OK but I don't like walking uphill too much.
Which is the best route through the Albacín which will go through the main points of interest?

As the Albaicín in on a hill the best thing to do is start at the top and walk down.
The highest place that the Albayzin minibus bus goes to is the Salvador Church.
The other day I did a walk through the Albayzin with some visitors and recorded the route on my PDA.
I actually started off at the free car park opposite the Merendero Granja on the Carretera de Murcia but you could just as well get the bus up from Plaza Nueva to the Salvador Church and then walk up to to the Mirador de San Cristobal which is the starting point.

Mirador de San Cristobal Iglesia San Bartolome Plaza Larga Mirador de San Nicolas San Miguel Bajo Plaza Carvajales Calle Beso Caldererias La Catedral Plaza Bib Rambla Zacatan Plaza Nueva.
I got on the bus at this point to go back up the hill but you could continue walking or stay on the bus to see.
